Busy in lab
I've been busy this week so I haven't been writing but it is the good sort of busy so that is ok. I like putting in time if I'm being productive. Also, my paper got accepted so that makes my week!
I guess I don't have much to write about except that I tried this great easy recipe from Giada from the Food Network, Chicken Saltimbocca. You take chicken cutlets and pound them flat, then pepper/ salt them, put a piece of prosciutto on the chicken, then put some drained, thawed frozen spinach (mixed w/ olive oil and pepper), then some parmesan cheese. Roll up the chicken starting w/ the skinny end, secure w/ toothpicks. Brown on both sides for a few minutes each; then add 3 Tbls of lemon juice and 14 oz. of chicken broth, cover and simmer until chicken is done (4-6 minutes). Remove chicken to plate and cook sauce 5 more minutes to reduce. Then drizzle sauce over chicken it is delicious! I also made oven roasted potatoes for the side. Yum!

Congrats on the acceptance!
The Giada recipe sounds tasty. Most of her stuff looks really good.
